About the course

In the course you will experience Swedish cooking culture through practical work in the kitchen, combined with inspiring lectures and discussions. We focus on traditional cooking methods and Swedish kitchen traditions but also introduce contemporary flavors and dishes. The course is aimed at students from other cultures to introduce Swedish cooking cultures and traditions. The course focuses on areas such as taste, color, and presentation, through laboratories with fresh and dried ingredients. During the course, local cooking methods and concepts as well as typical kitchen utensils and their handling are also introduced. Construction of dishes, aesthetic considerations, and sustainability perspectives are addressed. The goal is to develop one's ability to express oneself through cooking based on a Swedish culinary heritage. The course is therefore suitable for beginners as well as experienced.
The teaching is conducted at a 25 percent study rate and the study location is Umeå where mandatory physical meetings take place in the evening.
